This course takes students into the exciting world of making cakes, pastries, yeast goods and cold desserts to prepare them for work in a bakery, pastry shop or to start their own pastry businesses.

Students will learn, via live online classes, as well as monthly face-to-face workshops, to whip up delicious pastries and specialty cakes, including cheesecake, black forest cake and birthday cakes for your friends and family or your customers.

Students will further develop basic cake decorating skills, as they work with a variety of fillings, frosting and icings to decorate cakes with piping, borders, flowers, leaves and more.

  • Food safety and sanitation
  • Cookies, muffins and cupcakes
  • Cakes – Vanilla cake, Pineapple upside-down cake, Chocolate cake, Swiss roll, Carrot cake, Banana cake, Fruit cake
  • Specialty cakes – Cheesecake, Ice box cake, Black forest cake, Red velvet cake, Birthday cake
  • Pastry – Gizzada, Quiche, Tarts, Pies, Danishes, Eclairs,
  • Yeast goods – Dinner roll, Coco bread, Loaf bread, Pizza, Cinnamon roll, Donuts
  • Cake decorating tools and how to use them
  • Cake decorating skills and techniques using buttercream
  • Working with buttercream icing – colouring icing, icing consistency, how to fill and use a decorating bag with and without a coupler, proper bag angle, pressure control etc.
  • Preparing cake for decorating
  • Covering the cake
  • Combing and applying borders
  • Writing on the cake
  • Roses and drop flowers
  • Coating and decorating with chocolate
  • Cold Desserts – Souffle, Creme brulee, Bread pudding, Crepes, Trifle, Parfa, Panna Cotta, Ice cream, Sorbet, Sherbet

Duration

Six (6) months. Classes are held two evenings per week, between 5:30 p.m. and 8:30 p.m. Face-to-face workshops are scheduled on weekends.

Cost

$19,500 monthly. Assessment Processing Fee for NCTVET/HEART Certification is additional.
